Cacio e Pepe (or cheese and pepper) is a very simple recipe with lots of flavor. For this dish, you will need:
• black pepper
• olive oil or butter
• pecorino romano or parmesan cheese
• spaghetti, or pasta of your choice
• salt, to taste
Start with toasting your black pepper on a dry pan. Doing this for a couple of seconds brings out an entirely new flavor to the pepper. Then, add your olive oil or butter. Stir that together and turn down the heat. In the meantime, put your pasta in some hot water. Typically, to make the perfect ‘al dente’ pasta, you’re going to want to cook it for about 8 minutes. Add pasta and cheese to the skillet, stirring until the cheese is completely melted. And that’s it! If you prefer, add salt to taste and enjoy.
